                                Tender charred squid skewers paired with a zesty lemon and dill oil on a cos lettuce salad.

                                Ingredients
                                • 1.5kg frozen Topsail Squid Fillet, thawed & sliced into strips

                                • 400g baby cos lettuce leaves

                                • Caper and dill oil, for drizzling

                                • Aioli, for serving

                                Instructions:

                                Step 1

                                Thread Topsail Squid strips onto skewers. Chargrill or sear until golden and cooked.

                                Step 2

                                Arrange skewers on lettuce and drizzle with caper and dill oil. Serve with aioli.
