                                Fresh fennel and juicy orange segments are paired with tender, lightly charred squid rings in this Autumnal salad.

                                Ingredients
                                • 600g frozen Topsail Squid Rings, thawed

                                • 300g thinly sliced fennel, fronds reserved

                                • 400g orange segments

                                • 300g sliced chorizo, pan fried

                                • 60g baby rocket leaves

                                • 100ml orange juice

                                • 80ml extra virgin olive oil

                                • 15g mustard

                                Instructions:

                                1. Chargrill Topsail Squid Rings.

                                2. Combine fennel, orange, chorizo and rocket. Arrange on serving plates and top with squid rings.

                                3. Combine dressing ingredients and drizzle over salad.

                                4. Garnish with fennel fronds and serve.
