Scallop and Corn Chowder

Yield: 10 Servings

Creamy chowder with sweet corn kernels and tender scallops.

Ingredients
  • 500g diced onion

  • 50g crushed garlic

  • 300g diced celery

  • 1kg diced potatoes

  • 2L fish stock

  • 2 x Edgell®: Creamed Corn

  • 600g frozen Topsail Cooked Prawns - Tail Off, thawed

  • 500g firm white fillets

  • 1.15kg frozen Topsail Scallops - Roe On, thawed

  • 600ml light cream

Instructions:

1. Sauté onion, garlic, celery and potatoes. Add stock, Edgell Creamed Corn, Topsail Prawns and I&J Basa fish fillets

2. Meanwhile, panfry Topsail Scallops until golden brown and cooked.

3. Stir cream through chowder & ladle into serving bowls. Top with seared scallops and serve.
