Seared Barramundi with Mango Salsa

Yield: 10 Servings

Barramundi topped with tangy mango salsa, complemented by crunchy honey roasted macadamias.

Ingredients:
  • 10 x frozen Topsail Barramundi Portions, thawed

  • 400g diced mango

  • 300g diced avocado

  • 100g finely diced red onion

  • 20g finely chopped fresh coriander

  • 10g finely diced red chilli

  • 80ml olive oil

  • Lime wedges, for serving

  • 150g chopped honey roasted macadamia nuts

Instructions:

1. Season Topsail Barramundi Portions. Pan fry until skin is crisp and fish cooked through.

2. Combine mango, avocado, onion, coriander, chilli and oil.

3. Serve fish with mango salsa, and lime. Sprinkle with macadamia nuts.
