French Toast Bake

Prep this tasty dish the day before you want to serve it, and refrigerate overnight. Pop it in the oven the “morning of” for an impressive (and delicious) breakfast or brunch entrée.

Ingredient

Weight

Measure

Mixed berries, frozen or fresh

24 oz.

French bread, day old

1 loaf

Eggs

4 each

Sugar, granulated

2 Tbsp.

Brown sugar, divided

4 Tbsp.

Vanilla extract

2 Tbsp.

Maple extract

1 Tbsp.

Kosher salt

1/4 Tbsp.

Milk, whole

12 fl. oz.

Whipping cream

2 fl. oz.

All-purpose flour

1/4 cup

Butter, unsalted, 1/4-inch cubes

3 Tbsp.

Cinnamon, ground

1 tsp.

Nutmeg, freshly grated

1/4 tsp.

Confectioners sugar

to taste

Preparation Instructions:

Step 1

Cut bread into 1-inch thick slices. Arrange in a single layer in a greased 13×9-inch baking dish. Lightly beat the eggs with the granulated sugar, 1 Tbsp. brown sugar, vanilla extract, maple extract, and salt. Stir in the milk and cream. Pour egg mixture over the bread, turning slices once to coat. Refrigerate, covered, overnight.

Step 2

If frozen, thaw berry blend according to package instructions. Wash fresh berries.

Step 3

Preheat oven to 325˚F.

Step 4

Turn bread again to coat.

Step 5

For topping; combine flour, remaining brown sugar, butter, cinnamon and nutmeg. Blend until sandy in texture. Sprinkle over bread. Bake uncovered until a knife inserted in the center comes out clean and topping is golden brown, 45-50 minutes. Let stand 10 minutes before cutting into 8 portions.

Step 6

Top each portion with 3 oz. berry blend and sprinkle with confectioners sugar.
