Mini Avocado Lime Cream Tartlets

Crust

Almond flour	240 grams
Coconut butter, warmed to liquid	120 grams
Almond butter		1 Tbsp.
Sea salt		1/8 tsp.

Filling

Ingredient	Weight	Measure
Coconut milk, full-fat (the thick part from top of can)	180 grams
Simplot Harvest Fresh Avocados: Avocado Pulp, Frozen	240 grams
Lime juice	80 grams
Lime zest, organic		1 Tbsp.
Maple syrup		2 Tbsp.
Vanilla extract, pure		1 tsp.
Coconut butter, warmed to liquid

Preparation Instructions:

Step 1

Combine all crust ingredients in a bowl, and mix together.

Step 2

Press the crust mixture into the bottoms of 4 mini tart pans. Place in the freezer while you make the filling.

Step 3

To make the filling, combine all ingredients in a high-speed blender or food processor until smooth. Pour into the crusts, and set in the freezer until they firm up, about 30-45 minutes. Once they are set, enjoy!
