A delicious Asian inspired salad, taken to the next level with I&J crunchy salt and pepper prawns.

Ingredients

375g julienned carrot
200g thinly sliced red onion
650g sliced Lebanese cucumber
750g julienned red capsicum
250g rice vermicelli noodles, cooked following packet directions
300ml nam jim dressing
1kg frozen I&J®: Double Crunch Salt and Pepper Prawns
50g Thai basil leaves
50g mint leaves
250g roasted cashew nuts

Instructions:

1. Combine vegetables and noodles. Drizzle with nam jim dressing.

2. Deep fry frozen I&J Prawns following packet directions.

3. Serve prawns on salad topped with herbs and cashew nuts.
