A delicious fresh summer salad ideal for salad menus.

Ingredients

  • 1.5kgfrozen I&J®: Classic Salt and Pepper Squid

  • 750g sliced mango

  • 250g baby rocket

  • 250g sliced cucumber

  • 150g thinly sliced radish

  • 50g sliced red onion

  • 15g fresh mint leaves

  • Dressing, of choice, for serving

Instructions:

1. Cook frozen I&J Squid following packet directions.

2. Assemble cooked squid with remaining salad ingredients. Serve with dressing of choice.
