Crisp sweet potato wedges in a bowl of goodness.

Ingredients:

  • 1.1kg frozen Edgell®: Sweet Potato Crinkle Cut Wedge , cooked following packet directions

  • 600g cooked rice or grain salad of choice

  • 200g baby rocket leaves

  • 700g sliced cucumbers

  • 600g sliced avocado

  • 300g blanched asparagus

  • 50g alfalfa sprouts

  • 200g sliced radish

  • Herb yoghurt and lemon wedges, for serving

Instructions:

1. Assemble ingredients in serving bowls.

2. Serve with herb yoghurt and lemon wedges on the side.
