Aloo Gobi

Preparation Instructions:
Step 1
Thaw Baby Bakers™ according to package instructions. Cut into quarters.
Step 2
Heat oil in a large pan over medium heat. Add cauliflower and cook for 2-3 minutes followed by potatoes for an additional 7-8 minutes until the potatoes are cooked through. Remove all ingredients from pan and set aside.
Step 3
Add onions to the pan and cook until fragrant (about 2 minutes). Add cumin, garlic, and ginger and cook for 2 minutes. Add tomatoes and the rest of the spices, stir to combine and allow to simmer covered for 5-6 minutes. Return potatoes and cauliflower to the pan and allow to simmer over low heat for 10 minutes. Add salt to taste.
Step 4
Prepare fried rice according to package instructions. Serve over rice and garnish with cilantro.
