An easy, veggie-packed option with roasted potatoes, broccoli, black beans and cheese—so good that it might just make this bowl the smartest choice of the day.
Preparation Instructions:
Step 1
Defrost broccoli florets in refrigerator overnight.
Step 2
Preheat oven to 375°F.
Step 3
Arrange potatoes in a single layer on lined sheet pans. Bake at 375°F for 15-17 minutes until golden brown and crisp.
Step 4
Combine beans, granulated garlic, onion powder, and oregano in a large stockpot or steam jacketed kettle. Bring to a simmer. Continue to simmer uncovered for 20 minutes, stirring occasionally. Add vinegar.
Step 5
Place broccoli in a 2-inch perforated pan. Steam for 3-5 minutes until bright green. Do not overcook!
Step 6
To assemble bowls, place a #8 disher (1/2 cup) potatoes in a bowl or paper boat. Top with a #8 disher (1/2 cup) broccoli, 2 oz. perforated spoodle (1/4 cup) black beans, and 1 oz. of shredded cheddar cheese. Drizzle with 1/2 Tbsp. ranch dressing.
