Bring big satisfaction to the lunch line with this zesty, colorful bowl. With all the Tex Mex flavors and a chipotle crema sauce, students won't wait to dig in.
Preparation Instructions:
Step 1
To prepare sauce, use a stand blender or immersion blender and bowl, blend yogurt, chipotles in adobo, lime juice, granulated garlic, and salt until smooth. (The sauce can also be made the day before use.)
Step 2
Combine beans, salsa, chili powder, and cumin in a large stockpot or steam jacketed kettle. Bring to a simmer. Continue to simmer uncovered for 20 minutes, stirring occasionally. Add vinegar.
Step 3
To serve, build each bowl with 1 cup fried rice, #16 disher (1/4 cup) corn, #8 disher (1/2 cup) black beans, and .5 oz. cheese. Top with a #30 disher (2 Tbsp.) chipotle crema.
