Fried Baloney Club Burger with Tallow Fries

Preparation Instructions:
Step 1
Preheat oven to 400°F.
Step 2
For the Roasted Garlic Aioli: Cut the top off the garlic head to expose cloves, drizzle with olive oil, wrap in foil, and roast for 30-40 minutes until soft. Let the garlic cool, then squeeze the roasted cloves out of the skin into a bowl. Mash into a paste with a fork. Combine garlic paste with mayonnaise, lemon juice, and salt and pepper. Whisk until smooth. Refrigerate at least an hour before service.
Step 3
Form hamburger patties and season with salt and pepper. Cook 1-3 minutes on each side or until cooked through. Melt a slice of cheese on each.
Step 4
Lightly toast Texas toast. Spread 1 slice of toast with Dijon and the other two with the roasted garlic aioli. Assemble club by layering a slice of toast with the aoili with the burger with cheese, followed by a slice of toast with Dijon. Top with lettuce, tomato, 2 oz. of fried baloney, and finish with the slice of toast with roasted garlic aioli.
Step 5
For each serving, prepare 6 oz. of fries according to package instructions. Serve on side of burger, drizzle with Roasted Garlic Aioli.
