Mango Chicken Stir Fry

Toss tender chicken, lots of veggies and tropical mango together for a sweet-meets-savory dish that brings big flavors and a little fun to the lunch line.
Preparation Instructions:
Step 1
Prepare rice according to package instructions. Hold warm.
Step 2
In a large skillet or wok over high heat, add 1 Tbsp. oil. Add chicken and season with salt and pepper. Cook for 3-5 minutes and remove from skillet when cooked through.
Step 4
Add remaining oil to pan, then add stir-fry vegetable blend, red bell pepper, and mango. Cook until tender and thawed. Add ginger and garlic, cook for an additional minute.
Step 5
Add chicken back to the pan and stir to combine with vegetables.
Step 6
Add stir-fry sauce and bring to a boil, toss well to coat. Let boil for 1 minute.
Step 7
For each serving, place 1 cup of rice in serving dish, top with chicken and vegetable mix, then garnish with 1/2 Tbsp. of sesame seeds.
