Crispy Snapper And Veg Burrito Bowl

Crispy battered snapper fillets in a deconstructed burrito-style bowl with rice, corn, avocado and black beans.

Ingredients

  • 20 frozen snapper fillets

  • 1.2kg cooked white rice

  • 30g chopped fresh coriander

  • 550g drained Edgell®: Corn Kernels

  • 550g drained Edgell®: Black Beans

  • 400g cherry tomatoes, halved

  • 300g sliced avocado

  • 300g sour cream

  • Coriander leaves and lime wedges, for serving

Instructions:

1. Cook frozen fish following packet directions.

2. Combine rice and coriander.

3. Arrange ingredients in a serving bowl, top with fish. Dollop with sour cream and serve with extra coriander and lime wedges.
