A crunchy slaw of cabbage, carrots, corn and herbs, topped with a crispy, chicken schnitzel and dressed in a tangy, flavourful Asian-inspired sauce.

Ingredients

10 frozen Chiko®: Chicken Schnitzel (Sandwich Size)
450g julienne carrot
450g finely shredded wombok
550g shredded red cabbage
60g mixed Asian herbs (Vietnamese mint, Thai basil)
400g drained Edgell®: Corn Kernels
225g roasted chopped peanuts
125g sliced spring onions
325g vegetarian Asian style dressing, for serving

Instructions:

1. Cook frozen Chiko Schnitzels following packet directions. Slice.

2. Toss remaining ingredients together. Serve salad topped with plant based schnitzels.
