How about a new spin on the old Taco Tuesday lineup? Load up a serving of Tater Gems® with seasoned ground beef and top with Cheddar Jack, onions, cilantro, and a dollop of avocado.
Preparation Instructions:
Step 1
Thaw guacamole according to package instructions.
Step 2
Preheat a large skillet over medium heat and add oil. Sauté onions, stirring frequently, for approximately 5 minutes. Add tomato paste, chipotle peppers, chili powder, granulated garlic, oregano, black pepper and cumin. Sauté, stirring constantly for 1-2 minutes or until spices are fragrant. Add water, beef base, and shredded beef with its juices. Simmer the mixture over medium heat, stirring occasionally, until most of the liquid has evaporated, approximately 15-20 minutes.
Step 3
While beef simmers, prepare the Tater Gems® according to package instructions.
Step 4
For service; place Tater Gems® in serving dish. Top with seasoned beef, cheese, and guacamole, then sprinkle with fresh diced onion and cilantro.
