The perfect brunch bowl with Edgell Guacamole, Edgell Hashbrowns and Edgell Corn.

Ingredients

  • 600g sliced red capsicum

  • 20g smoked paprika

  • 40ml extra virgin olive oil

  • 350g mixed salad leaves

  • 750g charred Edgell Corn Kernels

  • 500g blistered tomatoes on vine

  • 500g cooked short cut bacon rashers

  • 10 frozen Edgell®: Oval Hash Brown, cooked following packet directions

  • 10 fried eggs

  • 2 frozenEdgell®: Guacamole, thawed

Instructions:

1. Combine capsicum, paprika and oil. Roast until golden and cooked.

2. Arrange salad leaves, capsicum, corn kernels, tomatoes, bacon, Edgell Hashbrown and egg in serving bowls. Serve dolloped with Edgell Guacamole.
