Breakfast Bao Buns

You’re seriously missing out if you haven’t tried Bao buns. This savory breakfast version features scrambled eggs, sweet potatoes, dill avocado spread, sliced serranos, and caramelized onions. They're a little different, a little spicy, and incredibly tasty.
Preparation Instructions:
Step 1
Prepare the Dill Avocado Spread, see the recipe here.
Step 2
Prepare roasted sweet potatoes and caramelized onions according to package instructions. Hold warm for service.
Step 3
Steam buns according to package instructions. Hold warm.
Step 4
For each bun, spoon 1 oz. prepared scrambled egg and 1 oz. sweet potatoes into the center. Top with 1/4 oz. pickled onion, serrano slices, and 1/2 oz. avocado spread. Garnish with fresh cilantro. Serve with 3/4 oz. caramelized onions on the side.
