The name says it all...an easy, savory bowl that keeps students satisfied and powered up throughout the day.
Preparation Instructions:
Step 1
Defrost mashed potatoes overnight.
Step 2
Preheat steamer. Place unopened bag of mashed potatoes in perforated hotel pans. Steam for 18 minutes.
Step 3
Place fiesta blend in a 2-inch deep steamtable pan. Heat from frozen, covered, for 15-20 minutes in the oven. If thawed, heat for 10-12 minutes covered. (Use a half size pan for 1 bag; full size for 2 bags).
Step 4
Prepare chicken fajita meat according to manufacturer's directions.
Step 5
To assemble bowls, place a #8 disher (1/2 cup) of seasoned mashed potatoes in a cup or bowl. Top with a #16 disher (1/4 cup) of the fiesta blend and 3.4 oz. of fajita chicken. Serve with .5 oz. of cheese and a #30 disher (2 Tbsp.) of salsa as condiments.
