Corn Fritter, Bacon & Avocado Stacks

Creamy avocado, crispy bacon and corn fritter stacks. The ultimate breakfast indulgence!

Ingredients

  • 30 pre cooked corn fritters, warmed

  • 2 x 454g tubs frozen Edgell®: Chunky Avocado Pulp, thawed following packet directions

  • 500g diced mini Roma tomatoes

  • 500g cooked streaky bacon, cut into 10cm lengths

  • Fresh coriander sprigs, for garnish

Instructions:

1. Place1 corn fritter on a serving plate and top with Edgell Avocado and tomatoes. Season to taste.

2. Top with bacon and another corn fritter. Repeat layers ending with a third corn fritter. Garnish with coriander. Serve.
