Avocado Poke Salad

This healthy salad is an original dish created by our corporate chef and inspired by the Hawaiian dish poke.
Preparation Instructions:
Step 1
Thaw the avocado according to package directions.
Step 2
Cut a half avocado into bite-sized pieces. Combine soy sauce through lime juice, add avocado and let sit for 10 to 15 minutes.
Step 3
Arrange the lettuce, carrots, cucumbers, edamame beans, and red peppers in serving dish. Arrange avocado over vegetables. Pour the dressing on top and top with coriander to taste.
