Fried Avocado Stuffed with Sweet Shrimp Tartare and Checca Sauce

The green of the avocado, the pink of the sweet shrimp, and the red of the chekka sauce are a visual treat. The key is to not overcook the sweet shrimp tartare.
Preparation Instructions:
Step 1
Thaw avocado and sweet shrimp. Drain thoroughly and season with salt and white pepper.
Step 2
Mix all the ingredients A together to make the tartar sauce. Sprinkle flour into the hollows of the avocado, then stuff the tartar sauce into them. Coat the whole thing in flour, egg, and breadcrumbs, in that order.
Step 3
Deep fry in oil (175˚C) for 2.5 minutes. *The key is to not overcook it so that the tartar sauce can be eaten half-cooked.
Step 4
Mix all B together. Once everything is mixed, add the pesto sauce to complete the checca sauce.
Step 5
Pour the checca sauce over the dish and garnish with salad and lemon wedge to finish.
